Seasonal  Favorites

1  mini pumpkin per person
1-2 T. Butter each
1-2 tsp. brown sugar to taste
 

Sprinkle of cinnamon and nutmeg   

 (or pumpkin pie spice)
 
 
 

JACK BE LITTLE MINI PUMPKINS

Directions:

Preheat oven to 350°.  Cut off the very top of each pumpkin, about 1/4 of the way down.  Scoop out the seeds and strings.  Put butter, brown sugar, cinnamon and nutmeg in each pumpkin and put the top back on.  Place pumpkins on a cookie sheet and bake 45-55 minutes, until fork-tender.  A fun start to an October or November dinner party, with a tiny cooked pumpkin on each plate.  Looks and tastes great.

1 Box Cheerios
1 Box Crispix
1 lg. pkg. Pretzels
2 cans mixed nuts
Pecan halves
2 C. melted butter (not margarine)

Texas Trash

Mix together cereals, pretzels and nuts in a large roaster pan. Add remaining ingredients and stir well. Cover and back at 250 for 2 hours, stirring every 30 minutes. Uncover last 30 minutes.

2 T. Tabasco
1 T. Chili Powder
1 T. Seasoned Salt
2 T. Garlic Salt
2 T. Worcestershire Sause

2 pkgs. Of 12 Sweet Hawaiian rolls (the small ones)
½ lbs. sliced Ham (NOT HONEY HAM)
12 slices of Swiss cheese

¾ cups Butter
1 ½ tsp. Worcestershire sauce
1 ½ tsp Dijon mustard

Ham and Cheese Sliders

Directions:

I know my pin said 5 ingredients, but this one was too good to not include. 😊 

Place 12 roll bottoms in the bottom of each of your 9 X 13 pans.  Place ham (about 2 thin slices) on each roll.  Add the cheese on top and put the tops on.

 

In a sauce pan, mix butter, Dijon mustard, Worcestershire sauce.  Wait until the butter is melted and then pour the melted mixture over the ham sandwiches. 

Cover with foil.  These are great if you can put them in the fridge overnight, but are great right away.

Bake at 350 for 15-20 minutes and serve.

Bacon Wrapped Jalapenos with Cream Cheese

16 oz. Cream Cheese
 

2 lbs. Bacon
20 Jalapenos (whole fresh)

Directions:

Wash and cut the core out of the jalapenos. (wear gloves) Place the cream cheese in a baggie and cut the corner off.  Push the cream cheese into the jalapeno’s and wrap in bacon.  These are awesome grilled, but can be made in the oven also.

Bacon Wrapped Water chestnuts

1 pkg. bacon
1 cup Brown Sugar
 
Dip
1 cup Ketsup
1 Tbl. Worcester Sauce
 

1 can Water Chestnuts drained
Soy sauce to soak the chest nuts (optional)
 
 
 
 
 

Directions:

Roll the water chestnuts in Brown sugar and wrap in bacon.  We don’t always soak them in soy sauce.

Grill until bacon is done.

I must admit I never make this the same way twice!  I’m going to write down a list of ingredients I use, but I often change the beans  and other vegetables to what I have on hand. I have also made it many times with Venison (YUM)  It makes a lot, so use a big pan and feed the family for a couple of days.

3 lbs. of Ground Beef
1 c. Diced Tomatoes (I use the Mexican style mild) You can adjust for taste.
1 lg. c. tomato Sause
1 sm. c. tomato paste
1 onion chopped
1 c. Pinto beans
1 c. black beans
 

Brown the ground beef.  When almost done add the chopped onion and cook until transparent.  At this point I get creative.  I use whatever beans I have in the pantry or freezer, I may put in green beans, okra, black-eyed peas.   Like I said, I never make it the same way twice.  I like to use fresh potatoes.  Add all ingredients to big pot and simmer until the potatoes are fork tender.

Cowboy Soup

2-3 potatoes cut in small pieces
1 c.  mixed vegetables or pkg. frozen mixed vegetables
1 pkg. Taco seasoning
